French Fruit & Flower Terrine

French  Fruit & Flower Terrine
French Terrine with fresh goji berries, black berries, marigold florets ( calendula ), the flowers of the borage and Agar Agar

Ingredients

  • 1 liter of white grape juice
  • 6 gr = 2 tsp of Agar Agar
  • fruits & edible flowers out of your garden, in this recipe I used: blackberries, fresh gojiberries, marigold florets ( calendula ), and the flowers of the borage.
  • loaf tin or terrine form

Directions

  1. First prepare the fruits and flowers. Do this very gently, especially the flowers are very sensitive. Remove the stalks and clean the fruits with water.

  2. Bring 200 ml of the white grape juice with 2 grams Agar Agar to a boil. Pour a layer of 0.5 cm in the tin or form and allow it to cool, this takes about half an hour.

  3. Lay 1/5 of the fruit on top of the first layer and pour the rest of the liquid over it. You can warm it up again to make it more liquid.

  4. Heat up the rest of the juice with the rest of the Agar Agar and repeat the directions above. Allow each layer to set before you proceed.

  5. Leave overnight in the fridge. Take it out of the fridge and quickly plunge it in a container with hot water. Then put it on a nice dish.
