Banana Cream Cake

Ingredients

  • CRUST:
  • 115 gr oatmeal
  • 65 gr white flour
  • 50 gr whole wheat flour
  • 25 gr sunflower seeds
  • 25 gr grated coconut
  • 25 gr sesame seeds
  • 0,5 soupspoon nutmeg
  • 2 teaspoons cinnamon
  • 0,25 teaspoon salt
  • 0,85dl oil (not olive oil)
  • 0,75 dl liquid honey
  • .
  • STUFFING:
  • 5 dl whipped cream
  • 2,5 dl soft curd cheese
  • 3 tablespoons of liquid honey
  • a pinch of vanilla
  • 5 organic & fair trade bananas
  • .
  • GARNISH:
  • 5 tablespoons of roasted grated coconut

Directions

  1. Crust:
    Preheat the oven at 345° Fahrenheit or 175° Celsius. For the crust: Mix the oatmeal, white flour, whole wheat flour, sunflower seeds, sesame seeds, grated coconut, nutmeg, cinnamon and salt together in a bowl. Add honey and oil and knead well by hand. Lightly grease in a spring form with a diameter of 9,4 inches or 24 cm. Dispense the mix in the form. First press firmly to the brink with your fingers, then use the bottom of a glass to press the crust. Bake the crust 15 to 20 minutes until it starts to get brown. Let it cool off totally.
  2. Filling:
    peel the bananas and cut them lengthwise in slices of 0,4 inches or 1 cm. Mix the soft curd cheese with the honey and the vanilla. Then slowly spoon in the whipped cream. Take the crust out of its form. Arrange a layer of banana slices on the bottom, then scoop a part of the whipped cream mix on top of it. In the same way make a second and a third layer, until there are no more banana slices and top of with a layer of the cream mixture.
  3. Finally sprinkle the lightly roasted grated coconut on top of the pie. Allow the cake to set in the fridge for minimum one hour.

    make sure to use white organic unbleached flour.
